well that killed dinner
As I twitted earlier about needed suggestions for supper as I headed out to the grocery store, I stopped off and dropped a load of laundry in the machine.
Gooster tried his best to offer suggestions but they just did not quite do it for me.
I ended up coming home with;
- Whole wheat tortillas
- Low fat mozzarella
- Chicken breasts
- Whole wheat bagels
- Cottage cheese
- Red pepper
- Red onion
- Mandarin oranges in juice
- Mushrooms
- Eggs
Was going to make garlic/curry chicken with sautéed onions, mushrooms and peppers, throw in some cheese and do it all in a wrap...
However, when I got home I realised, 7 minutes until laundry was ready to be pulled out of the washer, sorted, some hung to dry the rest thrown in the dryer...and right now at this minute there is only 70 minutes left at the pool and I wanna get a swim in!
So right now it is a toasted bagel with honey and a few globs of cottage cheese.
Grab laundry.
Go swim.
Make supper? If I do then I will have to do a power walk before bed. 1

Here is a recipe for ya. Not fancy but tasty as all hell.
Hobo Casserole.
Any ground meat (beef, turkey, chicken etc)
Frozen mixed veggies (the fresher the better)
small can of tomato sauce or salsa
1/2 can of v8 juice
1 roll of biscuitts
brown ground meat slightly in skillet, seansoning to your liking (it should only be half cooked)
drain grease and pour into baking dish
pour in half can of v8 and small can of tomato sauce
layer veggies over the meat
layer biscuits on top. (butter or not)
cook at 250 degrees for 20-30 minutes until bottom of biscuits are done. The meat and veggies cook up with the sauce.
You can experiment w/different meat/veggie combos. You can also swap the sauces out too. V8, salsa, pesto, etc.

I was wondering what you were going to eat on those bagels. I assumed you had some cream cheese already in the frig. Cottage chees? That's a new one on me. I'll have to try it. Much healthier than me eating butter on melba toast.

Moby - that sounds really yummy! Gonna give that a try; maybe even tonight!
CJ - actually what i have been doing lately is cracking an egg in a bowl, adding some ground pepper, giving the egg a bit of a beat, putting some cheese on top and then throwing it in the microwave for about a minute and a bit, then putting that on the bagel or english muffin! YUM YUM
